Title: Sugar Free Orange Cheesecake

  CRUST:
1cSoft whole wheat breadcrumbs
1/4cArtificial Brown Sugar
1/4cNatural Bran
1/2tsCinnamon
2tbMargarine
  FILLING:
1 Envelope Unflavored Gelatin
1/3cOrange Juice
1/3cWater
2cCottage Cheese
1smBanana
1smOrange
1tsOrange Rind
1tsLemon Juice
8 Fresh Strawberries (Opt)
8 Fresh Green Grapes

Crust: in a bowl combine bread crumbs, bran, sweetener and cinnamon. With fingers,rub in margarine, until mixture is crumbly. Press onto bottom of 8 inch springform pan.

Filling: In a small saucepan, sprinkle gelatin over and let stand for five minutes to soften. Place over low heat, stirring, until gelatin dissolves completely. Cool to room temperature.

In food processor or blender, combine cottage cheese, banana, orange juice orange rind, sweetener, lemon juice dissolve gelatin. Puree until smooth.

Pour into crust.

Cover and chill in refrigerator for 2 to 4 hours or until set.

Remove sides from Pan and with wide metal lifter, slip cheesecake off bottom of pan onto serving plate, or leave on base of springform pan.

Peel orange, removing pith and thin membrane. Separate segments and arrange on top of cheesecake. Slice strawberries and grapes add to garnish along orange slices.

Each serving is 1/8 of cheesecake.
